Suffren Patisserie, with locations in Amsterdam, the Hague, Dusseldorf, and Brussels, doesn’t qualify as a local place — but if you’re in Volendam, this Zeestraat bakery deserves a visit for its brownies alone.
Each slab of moist chocolate cake receives a hand-applied lattice of hazelnut sauce and maple syrup before being topped with a thick layer of crushed walnuts. We picked out a brownie in the case, but the friendly owner made sure we received a treat from the oven-fresh cooling trays in the back of the shop. Did we feel loved? Absolutely.
We didn’t get to sample the house specialties — any of several flavors of authentic Middle Eastern baklava, dusted with bright green pistachio nuts — or the stiff peaks of house-branded gelato in the counter up front. Just another reason to go back to Volendam, I’d say.

From the Volendams Museum, continue down Zeestraat toward the waterfront. Suffren Patisserie will be on the left, in an unassuming storefront with minimal signage.
